Ingredients:
- 1 large zucchini
- 1 onion
- garlic
- 2 dl cream
- 1 bouilon cube
- oil
- salt, pepper
Wash then cut up the zucchini and the onion. Heat the oil in a medium sized pot and throw in the onion and zucchini. After a minute, pour in water, enough to cover the concoction. Add the garlic, salt and pepper. When the zucchini is soft enough that a fork goes through it easily, take it off of the flame and purée with a food processor. Add the cream, and put the pot back on a medium flame. Bring it to a boil and take it off, the soup is now done. You can garnish with fresh parsley, croutons or roasted almonds.
